A typographic error was the cause of attributing to France the origin of the “Mahonesa”, when in reality it is from the Spanish island of Menorca (Mediterranean), according to the publication of a Balearic recipe of the 18th century.
In the presentation of the recipe book ‘receiptari caules. Cuina Menorcan of Segle XVIII ‘, researcher Pep Pelfort explained that “one of the most prominent aspects of this volume is the first documentation of the” Mahonesa “sauce, which appears in the manuscript under the name of’ Raw fish sauce ‘.”
This mention is considered “the oldest that has been located so far and confirms that the” mahonesa “has a Menorquín origin, in contrast to other versions that place it outside the island.”

The recipe book, integrated into a collection that aims to contribute to spreading the investigation of the roots of the gastronomic culture, indicates that the sauce, which was used both to accompany fish and for cooked dishes and white meats, was the preparation that would be disseminated later, for example, in France in 1811 with recipes such as the “Poulet Mayonnaise”.
The director of the collection, Francesc Solé Parellada, commented that the confusion occurred because in that first impression at the beginning of the 19th century in France, “the printer invested the orientation of the box with the letter ‘h’ of” Mahonesa “and became the ‘and’ of Mayonnaise.”
