The gastronomic excellence of 98 Mexican restaurants distributed throughout Spain has been awarded in the fourth edition of the Copil Seal delivery at the Casa México Foundation in Madrid.
In this year’s edition 36 new restaurants were added that have been awarded for the first time, of some 120 requests received, until they reached these 98 winners.
From them, 62 had already received the seal at least once in past editions.
However, “some of the award -winning restaurants lost the seal or closed,” said Efe Ximena Caraza Campos, general director of FCME on Thursday.
“All the world’s large reference restaurants have a Mexican working, a Mexican ingredient and a Mexican technique,” added chef Roberto Ruiz, a member of the Elector Committee of winning restaurants, thus highlighting the internationalization and recognition of the gastronomy of the North American country.
In addition, “there is the false idea that Mexican food always stichers and it is not true,” Risueña Caraza clarified.

“The most wonderful thing is that we are already receiving requests from other countries, such as Holland, France, Portugal, Iceland, who want to be part of the Copil label,” added the director of FCME, although for the moment “the decision we have made in the committee is that we first have to consolidate Spain very well.”
Chus Pérez, chef and owner of the Mexican Rinconcito restaurant in Gijón (northern Spain), awarded this year, said that the prize is a recognition of “a dream that is already reality”, which is “to bring the gastronomy of the pre -Hispanic era, the miscegenation (…) to our clients”, that “little by little, they know what Mexico is really Mexico.”
For Pérez, “Mexican cuisine is one of the best in the world.”
Gabriela Tandazo Mijas, owner of the agabar cocktail bar in Palma de Mallorca (Mediterranean), another award -winning, added that “Mexican cuisine is a piece of Mexico that can be taken to any part of the world.”
The seal is granted to restaurants that meet the excellence of authentic Mexican cuisine, rewarding the quality of the ingredients, which are one hundred percent Mexicans, the service or decoration, which since last year is not limited only to Madrid, but extends to the entire country.
Casa de México also presented the third edition of the recipe book “The Gastronomic Greatness of Mexico”, available in digital format and for the second time in printed version, with more than 100 family recipes.
This award was born in 2022 from the collaboration between the Casa de México Foundation, the Mexican Academy of Gastronomy (AMG) and a committee made up of professionals of the Mexican restoration, with the aim of being the guide for Spaniards looking for the best restaurants in Mexican gastronomy.
